How to Use Greek Seasoning
Coat cubes of meat with a mixture of equal parts Greek Seasoning, olive oil, and lemon juice. Seal in a plastic bag and marinate overnight. Heat one half of a grill on high heat. Skewer meat on a metal stick or wooden skewers soaked in water for about half an hour, then grill over direct heat until seared on all sides. Transfer to the cooler side of the grill to use indirect heat to finish cooking to the desired temperature. Serve with grilled pita or lavash bread, sliced and salted tomatoes, and yogurt-dill sauce.
Make home-made yogurt sauce a few hours before grilling by combining Greek yogurt with dill, lemon juice, salt, and (optional) a teaspoon or two of crushed raw garlic. Fresh dill works best, but our dried Dill Weed can be used as a substitute if fresh dill is not available.
