How to Use Poultry Seasoning

Mix one tablespoon of poultry seasoning with one-quarter cup of vegetable oil (or clarified butter, but not regular butter which contains too much water and will lead to soggy skin) and a healthy amount of salt (unless you already used a dry or wet brine). Coat the bird thoroughly, so the mixture sticks to the skin evenly, and then roast.

If you are making accompanying stuffing or gravy, add Poultry Seasoning to these side dishes to tie the meal together.
