Orange is my all-time favorite color. My favorite dress is orange, my trusty water bottle is orange, even my hair has a hint of orange in it! So, it’s no surprise that I’m excited to make this dinner tonight. And it doesn’t hurt that orange-colored foods have carotenoids that can boost your immunity and lower your risk for disease –just another reason to love this awesome color!
Sarah’s Tip of the Day:
The first step to making a delicious meatball soup is, of course, to make some delicious meatballs. These guys have a flavor base of onion, garlic, cumin, and cinnamon, which gets mixed into lean ground beef for you to form into meatballs. Then, simmer them in chicken broth along with sweet potatoes, carrots, tomato paste (for richness) and serve with some cilantro. It’s exotic, yet and it’s orange! Now that’s what I call an ideal dinner.

Recipe Ingredients:
4 teaspoons vegetable oil
1 medium white onion, diced small
Salt and pepper
2 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 1/2 pounds 90% lean ground beef
2 medium sweet potatoes, cut into thin half-moons
4 medium carrots, thinly sliced
3 tablespoons tomato paste
7 cups chicken broth
Chopped fresh cilantro, for serving
