Okay, let’s just admit it: The holidays are now officially over, and it’s time to hop on the light-and-fresh bandwagon. But eating well does not have to be dreary; trust me! Take this bright dinner for example: It’s a cheery yellow color and is infused with the bright flavors of pineapple and lime. You’ll love it!
Sarah’s Tip of the Day:
To start, arrange rounds of pineapple into little planks, set a fish fillet on top of each plank, broil them together, and then drizzle with a dressing made of lime juice, vegetable oil, agave nectar, and sliced jalapeno. Serve with some couscous that’s jazzed up with a bit of lime zest. The result? A tropical-inspired dinner that’s so easy you’ll actually feel like you’re on vacation. Watch the video to see how to break down a pineapple, and for a quick idea for putting the spiky pineapple skin to good use!
