Take this bright dinner for example: It’s a cheery yellow color and is infused with the bright flavors of pineapple and lime. You’ll love it!
Sarah’s Tip of the Day:
To start, arrange rounds of pineapple into little planks, set a fish fillet on top of each plank, broil them together, and then drizzle with a dressing made of lime juice, vegetable oil, agave nectar, and sliced jalapeno. Serve with some couscous that’s jazzed up with a bit of lime zest. The result? A tropical-inspired dinner that’s so easy you’ll actually feel like you’re on vacation. 1 tablespoon vegetable oil
1 teaspoon agave nectar or honey
1 jalapeno, thinly sliced
